Mini Burgers with Aubergines

Quick, easy and yummy yummy dinner...i love fresh home made burgers...





MINI BURGERS

||  Prep Time: 20 mins.  ||  Cook Time: 20 mins. ||  Total Time: 40 mins.  ||  Yield: 12 mini burgers  ||

Ingredients:

for the patty:
500 grams organic low fat minced beef 
(tried making this with cheaper beef I saw in Spinneys, it was not as good as this organic beef)
1 egg
1 tablespoon all purpose flour
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
pinch of Chinese 5 spice
dried parsley

for the toppings: (add whatever pleases you)
tomato
cheese
butter lettuce
pickles
onion

Directions:
  1. Mix all the patty ingredients.
  2. Shape into balls.
  3. Heat the pan and add oil.
  4. When the oil is hot, add the balls and flatten them while in the pan. Fry depending on how thick your patty is. I fried my patties for about 2 minutes on each side.

FRIED AUBERGINES

||  Prep Time: 20 mins.  ||  Cook Time: 15 mins. ||  Total Time: 35 mins.  ||  Yield: Serves 4  ||

Ingredients:

1 large aubergine
2 tomatoes
1 clove garlic, minced
1/2 cup mayonnaise
2 cups water
1 tsp salt
flour
fresh dill to garnish
oil for frying

Directions:
  1. Peel and slice the aubergine then soak into the water with salt for about 5 minutes.
  2. While soaking, slice the tomatoes and in a bowl combine garlic and mayonnaise.
  3. Dredge the aubergines in flour and fry until golden brown.
  4. Spread mayonnaise on aubergines, then a slice of tomato, garnish with fresh dill.
