MINI BURGERS

Ingredients:
for the patty:
500 grams organic low fat minced beef
(tried making this with cheaper beef I saw in Spinneys, it was not as good as this organic beef)
1 egg
1 tablespoon all purpose flour
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
pinch of Chinese 5 spice
dried parsley
for the toppings: (add whatever pleases you)
tomato
cheese
butter lettuce
pickles
onion
Directions:
- Mix all the patty ingredients.
- Shape into balls.
- Heat the pan and add oil.
- When the oil is hot, add the balls and flatten them while in the pan. Fry depending on how thick your patty is. I fried my patties for about 2 minutes on each side.
FRIED AUBERGINES

Ingredients:
1 large aubergine
2 tomatoes
1 clove garlic, minced
1/2 cup mayonnaise
2 cups water
1 tsp salt
flour
fresh dill to garnish
oil for frying
Directions:
- Peel and slice the aubergine then soak into the water with salt for about 5 minutes.
- While soaking, slice the tomatoes and in a bowl combine garlic and mayonnaise.
- Dredge the aubergines in flour and fry until golden brown.
- Spread mayonnaise on aubergines, then a slice of tomato, garnish with fresh dill.
