Pork Menudo and Mash


Menudo. It's got to be my favourite dish, not the Mexican version but the Filipino one. 

This menudo is somewhat different. No red hotdogs, liver and peas. Tomato and sugar is also non-existent. I have to try to please some little and big people. This was so easy and so tasty, from now on I think this is gonna be one of my go to lazy dinners. 




PORK MENUDO WITH MASHED POTATO

||  Prep Time: 10 mins.  ||  Cook Time: 50 mins. ||  Total Time: 1 hour  ||  Yield: Serves 4  ||

Ingredients:

for the mash:
2 large russet potatoes
milk
dried parsley
salt and pepper to taste

for the menudo:
700 grams pork belly, cubed
1 large red capsicum, grated
1 large carrot, grated
1 onion, minced (or chop it the way you want it)
4 garlic cloves, minced
200 ml water

Directions:
  1. Wash potatoes thoroughly, put in a pan cover with water and boil till its mashable, probably about 30-45 minutes. Work on the menudo while waiting.
  2. Brown pork in a pan on a medium-high heat, until its natural oil comes out. Add onion, capsicum and garlic. Saute for about 5 minutes.
  3. Add carrots and water. Cover and let it boil.
  4. Lower the heat to medium and simmer for about 20 minutes.
  5. Start peeling potatoes when its tolerable to touch.
  6. Hand mash, add milk (till you're satisfied) dried parsley, salt and pepper.
